
‘Cream’ of watercress soup
1 – 2 bunches fresh watercress
1 onion (chopped)
1 0z Pure or other non dairy spread
1 chicken stock cube
Soya milk
Soya cream (optional).
Salt & Pepper (optional)
Melt the Pure in a pan and then soften the onion, rip the watercress up and add this to the pan and let it fry gently for 1 minute with the onion.
Dissolve the chicken stock cube in 1/2 pint of boiling water and add this to the pan along with 1/2 pint of Soya milk. Bring to the boil and then simmer for 15 minutes.
Leave pan to cool and then whiz it all up in the blender which should give you a wonderful green soup. Add loads of black pepper and heat through again.
Add a dash of soya cream to the soup or a little swiz of it on the top of each bowlful to decorate.
Serve with big chunks of fresh bread. Yum.
Warning : I absolutely love black pepper but have to say that it always, without fail, gives me the most horrendous hiccups – ask Pub.

G’day! Home and bearing gifts though failed on the spread… could only find choc bars and did trawl around Coles AND Woolworths and the 7-11 (when I asked the oriental man in Coles if he could point me in the direction of the dairy free section he asked what suberb it was in… bit of a language thing going on I think so left quickly as people were looking at me funny!) Am up in the city this weekend so will pass onto Longstory Boy, so should be with you soon xxx

As soon as I can dig up some dairy free spread (still haven’t found any; gets sort of frustrating; can imagine how it must be for you who REALLY need dairy-free stuff), I’ll give it a try. On the other hand: I like soups without any kind of cream anyway – especially the ones with pumpkin and chervil, in just about any combination!
